CALVIÀ HOSTS AN OLIVE OIL TASTING WORKSHOP
• The residents of the municipality will learn about the healthy properties of olive oil and will learn to taste different types of this food
• The tasting workshop, carried out by CSIC researchers, will be held on Thursday 7th April at 5.30 p.m. in the Calvià-Can Verger Library, prior registration
• Calvià hosts this activity within the framework of the Ciudad Ciencia dissemination project, promoted by the CSIC in collaboration with 50 municipalities
Olive oil is one of the best examples when it comes to reconciling gastronomy and health. But are all olive oils equally healthy? What does olive oil have that seed oils do not? Calvià residents will be able to discover these and other questions thanks to the 'Olive oil, the liquid gold of our time' workshop to be held on Thursday 7th April at 5.30 p.m. in Calvià-Can Verger Library, for those residents willing to do so, with prior reservation.
Researcher Raquel Mateos from the Food Science and Technology and Nutrition Institute, a centre belonging to the Higher Council for Scientific Research (CSIC), will try to answer frequently asked questions about this food. Thus, the workshop will review the types of commercially available oil to find out which is the most suitable depending on its intended future use. Its composition will also be delved into to find out the ingredients that make it unique and provide that nutritional value, despite being a fatty product.
Oil is an ancient tradition product, whose value was already recognised by different civilisations, although it has also been questioned for decades to the point that its consumption is discouraged in favour of other vegetable oils, such as sunflower or corn oil. However, since the benefits of the Mediterranean diet, whose main source of fat is olive oil, began to be recognised in the 1950s, there is numerous scientific evidence that demonstrates the benefits of its daily and moderate consumption.
The activity, in which the most relevant scientific works on the health benefits of consuming 'liquid gold' will be presented, will be complemented by an oil tasting whose objective is to discover key aspects of this product.
At the tasting, it will explained how to analyse this product through the olfactory, gustatory/retronasal and tactile phases, the sensory characteristics (flavour, aroma and texture) and the description of the main negative and positive attributes.
This activity is part of the Ciudad Ciencia scientific outreach project, an initiative developed by the Higher Council for Scientific Research (CSIC) whose purpose is for the Spanish towns residents to first-hand learn about current science and technology. The Ciudad Ciencia network is made up of 50 Spanish municipalities.
